"Pinot Gris is known to winemakers as a mysterious and intractable variety. Harvested too early, as is often the case, it's insipid. Picking late, when it tastes like something, requires pristine yeasts to get through fermentation and an expert hand in the cellar. There are few winemakers as capable with Pinot Gris as J.F. - his cousin Bruno comes to mind - and the 21, like Riesling, was largely sourced from the Grand Cru of Steiner.
