"The final blend is roughly equal parts Petite Sirah, Syrah, and Sauv Blanc by volume though the majority percentage of personality might skew towards the PS. The ferments all macerated for ~5 days and were pressed to tank where they settled for a few weeks before being blended. 15g/l of sugar was added at blending the day before bottling to give the wine a bit of spritz. It’s uhhh pretty darn good. You could get away without telling people it is a Piquette(and I have). Gamay d’Auvergne vibes from this balance of fruit and feral. Definitely had wild natty Lambrusco as an inspiration. Undisgorged. Make very cold or it will do the geyser thing." - Brent Mayeaux (the winemaker)
