"...an important part of Jérôme's identity as a winemaker is the elaboration of late-harvest wines, which are synonymous with the Coteaux-du-Layon appellation to which his Chenin Blanc vines theoretically belong. Often picked in November with obscenely low yields, Jérôme's botrytized Layons spend anywhere between 3 and 10 years in barrel and/or glass, during which time they slowly ferment, while also taking on a "traditional" oxidative character. Unconstrained by chemical intervention or chaptalization (a practice strangely authorized in appellations for "noble" sweet wine), "Raisins Surmuris" is among the most unique beverages made in France.

One barrel of Coteaux du Layon was made in 2017, bottled after 4 years of élevage. Concentrated, delicately perfumed and probably hallucinogenic, it's a wine to finish a special meal at a "grande table," according to Jérôme." - Percy Selections (the importer)
